Due to the drastic temperature swings that come with operating a grill, austenitic steel is considered the best. This is because austenitic steel has an operating temperature of well over 1000 degrees Fahrenheit.
Of austenitic steel grills, there are two grades: 304 and 316.
Both are great options for grills and have their own benefits.
While both grades are incredibly resilient against rust, 316 is even better suited for wet conditions. That being said, there is a premium for that benefit as 316 is significantly more expensive than its 304 counterpart.
Regardless, whether your grill is made with 304 or 316, it’s not going to rust anytime soon.
